Private Parties and Summer BBQ’s in Sussex

This week the sun has been shining, encouraging everybody to think summer is on its way and I think we can all agree it’s about time after all this cold weather!!!

As usual all this good weather seems to have sparked everyone’s thoughts for summer BBQ’s and celebrations, so we have had an influx of emails for information about our services for private events across Sussex, which is all very exciting.

So my question to you is… have you got a birthday or celebration coming up or just feel like getting some friends together?

Well one of our clients did! He organised a beautiful marquee to be erected in his garden and invited his nearest and dearest for a good old knees up. Once Red arrived that day, we took all the stress off hands, allowing him to just sit back, relax and have a glass of Pimms. We laid the table, poured the drinks, served a sublime 4 course dinner, and cleared everything up at the end of the night…. We were discreet and efficient and no request was too much trouble, all in all, it was a magnificent event and the client was truly thrilled… and he didn’t have to lift a finger, sounds perfect to me!!!

Waste not, Want not…

My search for blog inspiration today led me to a story which tickled my fancy so I thought I would share it… 
 
The story concerns a couple of things close to the heart of Red… Food being one (aren't I full of surprises?) and secondly, 'being green'.  We try as hard as possible here at Red to be kind to Mrs. Nature and our ever-changing world.  A concern for us, as with any restaurant or catering establishment, is food wastage, which is what the story was centred around.  More specifically, one Australian Chef's rather unusual measures of wastage control.  According to the story, "Chef Yukako Ichikawa is offering a 30% discount to guests who eat all the food they order in her restaurant, Wafu. Those who fail to clean up their plates are not welcome back."
 
Although Chef Ichikawa does kindly add that "lemon slices, pickled ginger and wasabi" can be left on the plate… The idea, whilst initially seeming a little harsh, could actually prove quite effective; it would certainly put me off hiding my remains under my knife.  I say this as if this is a common occurrence.  It's not; I like my food.  In fact more common a concern after I've inhaled a plateful would be around the amount of crockery left; not food… But this Chef's ruling does not leave much room for the fussier eaters out there, does it? Perhaps therein lies his real motive.  
 
Whilst this may work for Chef Ichikawa in Australia, I can't see Red adopting the same ideas.  With our level of experience in the catering industry, knowledge of food quantity is second nature, so happily wastage is kept to a minimum here at Red.  But we do have practices in place to take care of rare but pesky leftovers.  We proudly donate to Worthing Churches Homeless Projects, boxing up what's left and delivering it to the fantastic team over in Worthing.  When this isn't possible, our staff do a tidy job taking care of things!

Like Chef Ichikawa, Red are working hard to minimise food wastage and “take seriously our responsibility toward the environment and sustainability for the future” (taken from the Wafu web page).  Wouldn't it be great if everyone did the same!

Great South East Care Awards 2011

Following on from Laura’s blog last week, I thought I’d let you know how the Care Awards event at the Brighton Dome transpired…
 
As we arrived, the autumn sun beat down and the team had begun unloading the vans, so us girls swiftly slipped past avoiding too much heavy lifting. The Corn Exchange was a sight, there were precariously placed ladders, wires littering the floor and an assortment of tables and chairs strewn in amongst the chaos. Positively Laura chirped ‘Ok, Ladies, Gents. Let’s get to work!’ and so we did. Folding napkins and neatly laying cutlery, straightening tables and chairs allocating numbers and aligning salt and pepper mills, 3 hours later the room was complete.  We retreated to the changing rooms with bleary eyes and aching backs and awaited the arrival of fresh feet.

Once the full team was with us we rapidly changed and Laura set to work explaining the plan of attack (it could only be described as an attack with 431 hungry mouths to feed!), we split the staff into 2 teams and allocated jobs asking them to distribute themselves along the sides of the venue. The curtains were pulled back and the guests were able to view the room in all its glory. They meandered through the room finding their seats, greeting colleagues and friends along the way. When finally all had taken their seats we were off. Each team had 220 guest to feed and only 2 hours to do it. 

 
We served starters, table by table, moving seamlessly throughout the room, with our supervisors managing any dietary requirements as we went. 15 minutes later Laura and I emerged from either end of the room beaming. No rest for the wicked though, as we were straight onto clearing, sliding through any gap we could find to remove every empty plate.

Another 15 minutes passed and it seemed all was going well. Starter had been served and cleared and we were just waiting on the sign from the kitchen that they were happy for mains to be served. The signal came and the staff set to work. 20 minutes later and the mains had all been served so again we were back to clearing. 

 
Once every plate, bread board and salt and pepper mill had been removed from the tables the staff were ready to begin dessert service. They glided through the room and presented each guest with a delicious end to the meal. 
 
After the coffee was served all the staff retired to the kitchen for a rest and some food as the guests settled into their seats pleasantly full to watch the award ceremony.

Getting Ready for a Biggun’

Tonight we have rather a large event at the Brighton Dome, so it’s all ‘go’ here at the unit, making final preparations.  The event is an awards ceremony to reward Care Workers in the South East, whose praises are perhaps not sung often enough.   Tonight is the last in a series of Care Awards ceremonies throughout the country, and Red Anywhere are very proud to be the chosen caterers for the event.
 
We have been working with our client over the last 6 months or so and since conducting a menu tasting just before the Summer, have been putting plans in place to ensure the evening is a success.  The planning in the lead up to an event is as important for Red as the day itself, so there have been time tables, dietary requirement charts and service plans flying around this event file for a good while.  
 
When guest numbers for the Care Awards increased from the original estimate twofold, Red were as surprised as, it transpires, the client was.  Good news all round though, as it meant word of the event was travelling fast.  Perhaps people caught wind that Red would be catering!  We busily increased equipment orders and staffing, maintaining regular contact with the Event Manager at the Dome to ensure everyone was reading from the same page.  With careful amendments we were ready to rumble in the catering jungle…
 
As I write, the Red vans are being loaded with equipment; an exercise fondly referred to by all of us here as a game of Tetrus; Andy Gamble is quite adept at it.  Here in the office, Sophie and I have been finalising and perfecting our detailed service plans to ensure the smooth and efficient management of our staff tonight; key to a top notch food service.  Everyone is accounted for and assigned to roles throughout the event and so long as communication between front and back of house is kept up, we cannot go wrong!
 
We’re heading off now to brave the nightmare that is parking in central Brighton so I will sign off here.  Sophie will update you all next week on how it went…

Once upon a time….in a castle in Sussex…

Once Upon a time, in a land not so far away, was a catering company called Red Anywhere. As a small little business Red worked quietly away creating beautiful events for all their clients. One day Red received an invite to work at a magical castle. They hurriedly replied and began to prepare all their best dishes to impress them. 
 
Before they knew it the day had arrived. As the sun began to set Red found themselves stood at the castle gates, as they slowly entered they were in awe of what surrounded them.

It was a cold autumn evening, and the wind howled through the grounds. Excitedly Red whipped into action, the linen drifted neatly over tables and glasses tinkled as they lined up before their eyes. The whistle and pop of champagne bottles filled the air as slowly the glasses filled and glistened, enticing all who looked at them.

When the clock struck nine the castle came alive. Guests in beautiful attire floated into the great hall and were immediately drawn towards the glistening glasses. The room filling, Red began to circulate, maintaining every guest’s full glass.

A wonderful aroma met the guests as Red presented platters of canapés to all. The canapés glided to each guest encouraging them to try all varieties. Red continued with confidence creating beautiful combinations for all the wonderful guests. 
 
As the evening drew to a close and it seemed all were impressed, Red left with a smile for some well deserved rest! 
 
 
The celebration was to mark the bicentenary birth of the founder of Lancing College, here in Sussex. Both students and Faculty worked together on the production of ‘Joseph and the Amazing Technicolor Dreamcoat’ this was the Gala performance and was attended by many VIP’s one of whom was Sir Tim Rice a former pupil at Lancing College. 
 
Red Catered for 300 guests, which included the cast, faculty, parents and VIP’s. They received a selection of savoury and sweet canapés and a continuous flow of champagne along with exceptional service throughout the event.
